Go to coinbase.com → Settings → Subscriptions → click 'Cancel Subscription' next to Coinbase One → confirm. Your benefits continue until the end of your billing period.
Option 2: Mobile App
Open Coinbase app → Profile → Settings → Subscriptions → Coinbase One → Cancel. If you subscribed via Apple/Google, cancel through your device's subscription settings.
