Udemy Pro costs $16.58-$29.99/month for catalog access to 12,000+ courses. But Udemy's real value has always been individual course purchases during sales ($9.99-$14.99 per course). If you're not actively binging courses, the subscription wastes money.
Any courses you purchased individually (not through the subscription) are yours forever. They remain in your library after cancelling Pro. Only Pro-exclusive catalog courses become inaccessible.
Udemy runs sales every 2-3 weeks where courses drop to $9.99-$14.99. For $30/month (subscription), you could instead buy 2-3 courses that are yours forever. If you take fewer than 2 courses per month, individual purchases are cheaper.
